Pick a species or 'Mix of Species'. A Medium Flat Rate box usually comes in at 10-15 pounds, and a Large Flat Rate box comes in at 14-20 pounds

In photos 2 through 8 you can see a Large Flat Rate box being filled with Cherry. It's kind of like playing Tetris.

These are for my own use. However, larger projects produce more scraps than can be used up... so they get boxed up for you.

The 'Mix of Species' will typically have more species than listed... there are over 20 boxes of constantly shifting specialty woods in my shop including species with labels such as "Yellow Grainy Mystery Wood" or "Fruit Wood Chunks".
